Born in Medellín, Colombia, Carlos Fernando Londoño is Co-Owner and General Manager of Café Pacifico in London — winner of Tales of the Cocktail’s Timeless International Bar Award (2024). For over 25 years, Carlos has been at the heart of tequila culture in the UK, launching numerous brands and creating events in collaboration with the Mexican Embassy such as the Annual Tequila Fair, ProMexico’s Wine and Spirits Fair, and Café Pacifico’s Tequila Season. He has represented brands including Cava de Don Agustin, Maracame and Tequila Ocho, and co-created El Pandillo Tequila with Master Distiller Felipe Camarena. Carlos also chairs the International Spirits Challenge (Drinks International) and leads Café Pacifico’s certified Agave Training Program — the only one in the UK accredited by Mexico’s Tequila Regulatory Council. He founded the T.E. Corazón de Agave Fund in memory of Tomas Estes to support social and charitable causes within the drinks community.
