Dom Carella, born in 1984 on the coast of Lucania, is a multidisciplinary food and beverage professional known for his holistic approach to hospitality. With over twenty years of experience as a chef, bartender, and manager, he combines creative sensibility with a full-spectrum understanding of product development, cost control, and operational management. His philosophy bridges flavor, structure, and strategy—translating culinary ideas into profitable, consistent, and memorable experiences. Driven by an insatiable curiosity, Dom has traveled the world, refining his expertise through key roles such as Bar Manager at 8½ Otto e Mezzo Bombana (three Michelin stars), where he was named Manager of the Year Asia by That’s Shanghai in 2015. He later collaborated as consultant for Dry Milano, Bokan Canary Wharf in London, and served as Beverage Director for the Pirata Group in Hong Kong. In 2019 he returned to Milan, partnering with leading brands such as Langosteria and Aimo e Nadia, and working alongside world-class chefs and international groups. His collaborations include Himanshu Saini (Trèsind Studio Dubai), Ana Roš (Hiša Franko, Kobarid), and Mauro Colagreco (Mirazur), contributing to the conception and redesign of restaurants, beverage programs, and hotel operations worldwide. He is the founder of Carico Milano, an eclectic cocktail bistrot recognized with multiple awards, and creator of innovative concepts such as The Martini Room—the world’s first venue entirely dedicated to the Martini—and The Negroni Room, an immersive experience celebrating Italy’s cocktail heritage. He also launched Ultra Milano, an urban concept merging pizza culture and mixology. In every project, Dom promotes a sustainable and integrated vision, where kitchen, bar, and service work as one ecosystem.
