Giovanni Allario

Travels, influences, and encounters shape the journey of Giovanni Allario. Born in Caracas in 1991 and raised in Genoa, he began studying industrial design before discovering that his true passion lay in hospitality. After his first experiences under the Lantern, he moved to Paris, where he honed his technique and creativity working in some of the city’s best bars. He took part in the opening of Danico and went on to manage Le Syndicat, both ranked among the world’s best venues in the World’s 50 Best Bars list. In 2022, he returned to Italy to take over the bar at Moebius in Milan — a venue that combines restaurant, tapas bar, and cocktail bar into an experience dedicated to experimentation. There, he developed an innovative approach to mixology, reinterpreting classics and creating new recipes inspired by Italian cuisine and ingredients. In 2024, Moebius entered the World’s 50 Best Bars, ranking 33rd, and in 2025, it climbed even higher to reach 7th place. That same year, together with Lorenzo Querci and Enrico Croatti, he launched Lubna, a new project where design, art, and music blend with mixology and the world of open-fire cooking.
