Phil Bayly has been educating and promoting Agave Spirits for over 45 years. Throughout his career, he has opened 18 Agave-focused bars across six countries, including London, Paris, Amsterdam, Cologne, and Milan. In 1997, he established Australia’s first Tequila Bar in Sydney, which he successfully operated for 16 years. In 2015, Phil founded Agave Love — a series of educational and cultural events celebrating the diversity of Agave Spirits. These gatherings brought together regulatory councils, master distillers, brand owners, and bartenders from Mexico and across the world to share their stories and passion. Agave Love events have been held across Australia and internationally in Singapore, Kuala Lumpur, Hong Kong, Seoul, Tokyo, London, Helsinki, Minsk, and St. Petersburg. Phil also curates an annual Agave Program at the Athens Bar Show. His contributions to the industry have been widely recognised: he received the Outstanding Contribution award from Australian Bartender magazine in 2008, and in 2017, he was named the first Global Mezcal Ambassador by Mexico’s Mezcal Regulatory Council. He is also an author and is currently working on his third book dedicated to Agave Spirits.
