
Simone Covan’s professional journey began in Florence, the city where he was born and raised, and has evolved through a blend of training, research, and passion for the art of mixology. After earning his scientific high school diploma, he began his career as a bartender in some of Florence’s most renowned venues, balancing hands-on experience with numerous professional development courses during his university studies. A nine-month stay in Madrid marked a turning point: working as a bartender in the Spanish capital, Simone discovered Mixology as a true language of creativity and expression, which has since become the cornerstone of his professional growth. Since 2018, he has been collaborating with the Becoming Barman School, where he serves as Trainer for the Advanced Mixology Course, helping to shape a new generation of bar professionals. Two years later, he joined Why the Best Hotels, where he currently holds the position of Corporate Bar Manager, overseeing the direction and management of the group’s cocktail bars across Florence, Rome, and Venice. Within the group, Simone has been a driving force behind a renewed vision of liquid hospitality, merging technical research, aesthetics, and the storytelling of the drink. Together with his Business Unit, he conceived and developed two key projects: the Santa Cocktail Club, a signature concept bar now present in all three cities, and Fede Cocktailab, a creative laboratory dedicated to experimentation, advanced training, and the development of new concepts in the world of mixology. In 2025, the Santa in Florence received the prestigious Pinnacle Guide recognition, confirming the value of an approach that blends technical precision, creativity, and a deep sense of hospitality. Today, Simone Covan stands as a reference figure in the Italian mixology scene, dedicated to the ongoing evolution of cocktail culture and to spreading a vision of the bar as a sensory, cultural, and human experience.
