Nikoleta started her career in 2015 in service and turned to bartending in 2020. Through continuous training and personal growth she soon became Head Bartender at Diego Athens. She then worked as Head Bartender at See You Soon on Tinos, followed by a collaboration with Abstract Multiverse in Athens. The next summer she was in Mykonos working as a bartender at Zuma, gaining experience in demanding, high-end environments. She then took her next step, creating her own venue in central Athens, Ichigo Ichie, a bar with Japanese influences and a contemporary approach to cocktails. She has attended training programmes at Bar Academy and Fogcutters, constantly developing her knowledge and approach to modern bartending.
