Sotiris Konomi is a Greek hospitality professional with over a decade of international experience across leading hotels and award-winning bars. He is Head of Spies and Beverage Manager at Raffles London at The OWO, ranked 28th in the World's Best Hotels. Sotiris was part of the hotel's pre-opening team and led the development of The Spy Bar, transforming it into a distinctive destination for cocktails, creativity and immersive hospitality. Under his leadership, The Spy Bar has earned a place in 50 Best Discovery, won Best International Bar at the 2025 Spill Awards by InsideHook, has held Two Pins from The Pinnacle Guide since its inaugural announcement, and secured international recognition through Top 500 Bars and Top 50 UK Bars. In 2026 Sotiris was named Bar Manager of the Year at the CLASS Bar Awards, recognising his leadership, commercial performance and contribution to the bar industry. Passionate about developing people, creating memorable guest experiences and pushing the boundaries of luxury hospitality, he continues to lead The Spy Bar as Head of Spies while overseeing the beverage programme across Raffles London at The OWO.
